Bakery 

Opening up new opportunities across the Bakery sector

The bakery sector has an output of approximately 2.5 million tonnes, with bread being the dominant product. This results in CO2 emissions of some 570,000 tons per annum. This is produced across a range of bakery types: large industrial; in-store supermarket; and master or kraft.  There are approximately 89 large industrial bakeries in the UK.

Key findings from the Carbon Trust Stage 1 Report

  • The prover, oven, cooler and associated steam boiler plant typically account for between 50% and 60% of the total carbon emissions from an industrial bakery.
  • Introducing automated control of oven burner combustion could save a site up to £27,000 per year.

By working closely with key players in the bakery sector, the Carbon Trust analysed detailed energy data within the baking process and identified three challenge areas that will lead to energy and cost savings for businesses in this sector.

Industrial Energy Efficiency Challenge

We are interested to hear from companies interested to undertake an innovative challenge in the bakery sector:

Heat Recovery and Exhaust Gas Control


The project will implement and assess energy reduction through novel burner control and exhaust gas heat recovery. The project could combine (i) burner control technology, which provides the optimum air/fuel ratios in baking ovens for efficient fuel combustion, with (ii) heat recovery technology in order to optimise control of the flue gases. The system will allow for the installation of a heat exchanger that will recycle some of the heat in the flue gases for useful purposes. This is likely to be a 24 month project. The funding available from the Regional Growth Fund is £69,000. Total project cost is likely to be £174,000.

Additional funding may be available through the Energy Efficiency Financing Scheme, a £550m fund established between the Carbon Trust and Siemens Financial Services. For further details, visit Energy Efficiency Financing.
